Rachel Meyer is a plant evolutionary biologist and co-founder of Shoots and Roots Bitters. Many of the species that she uses to manufacture bitters are simultaneously her research subjects. Shoots and Roots seeks to promote biodiversity and educate people about a variety of plants from around the world using sensory experience. Meyer specializes in the evolution of foods, particularly eggplants in Asia and African rice. As part of Shoots and Roots, she teaches The Science of Taste, Botany for Bartenders, and Nature’s Pharmacy. She is also a postdoctoral researcher at NYU focusing on crop genomics.
